Blueberry Muffins with Blue Cornflour

Ingredients

  • 1 cup  Blue Cornfour
  • 1 cup  All-purpose flour
  • 1/2 cup  Sugar
  • 1/2 tsp  Baking powder
  • 1 tsp  Baking soda
  • 1/2 tsp  Salt
  • 1 1/4 cup  Buttermilk
  • 2  Eggs, lightly beaten
  • 1/2 cup  Unsalted butter, melted and cooled
  • 1 cup  Blueberries

Directions

Sift all the dry ingredients like blue corn flour, white flour, sugar, baking powder, baking soda, and salt into a medium bowl. In a separate bowl, whisk together buttermilk, eggs, and melted butter.
Make a well in the center of the dry ingredients, pour liquid ingredients into well, and stir to combine. Add the blueberries.

Preheat oven to 200deg cent. Fill each muffin cup about half full with batter. Bake for about 25 minutes.

Let it cool for about 10 minutes before removing muffins. If required add some sprinkles in the batter before baking.
