Preheat oven to 180deg cent. Slice the onion and carrots. Chop garlic. Heat oil in a skillet and fry the onions, garlic and the carrots. When carrots are cooked, add the refried beans, corn and salsa. Add Mexican seasoning. Let it simmer for 5 minutes and turn off the heat. To this mixture, add diced jalapenos and sour cream.
Layer the above mixture with the tortillas in a baking dish and top with some grated cheese. Place in the oven for about 20 minutes or till the cheese starts bubbling. Serve warm with a mixed lettuce salad.
Tip: Variants of the same can also be attempted. You can add some cooked long grain rice, cream cheese and chopped lettuce to the above mixture and spoon some of this into each tortilla and role it up into Burritos. The same can be attempted by substituting tortillas with tacos or fajitas.
